You could also take the bus to St. Jean Cap de Ferrat and then walk the beautiful seaside promenade that twists around the coast there. Town itself is quite small- a handful of galleries and stores- but it has some of the best seafood restaurants ever at port level, like LE SAFARI, where you can get a bowl of really fresh mussels and great steak frites.
St. Paul de Vence is worth a trip, too, but it can be quite a tourist trap, and is likely to be more crowded than St. Jean. However, it has some lovely restaurants with outstanding views of the countryside, very good galleries and shops within the walls, and can be a pleasant day trip. There's a bus from Nice that takes about 50 minutes from the center of town to St. Paul.

If the weather is warm, I'd spend the day on the beach.
Otherwise, I'd probably jump on the train to Cannes or Monaco (assuming that I would have the chance to see some of Nice on other days of the business trip.
And, I'd have mussels and frittes at Barracuda again
