It may seem too far -- but actually York is very accessible from East Anglia/Cambridgeshire. Easier in some ways than some of the other counties you listed.

My husband and I have been talking and we decided to save this trip for another year. We would rather go when there is more in bloom/warmer weather.
So I'm "filing" this for June 2017, thanks all!
If anyone has any comments/knowlege of southern France, I'll start a new thread for a March trip there, would appreciate any suggestions!
