Heidi, I've been to Santorini twice and both times for 5 days and we weren't bored. Santorini is an island that should be explored, even though it's not big the sceanery is wonderful so it's nice to take your time and see it. Even though most people don't like the beaches in Santorini I think they're fine. In Perissia where I've stayed the beach is clean, bwith tavernas and such but not too crowded, but you do need shoes because the black volcanic sand does get very hot. The red beach near Akrotiri is also worth a peak. If you like to hike try the trek to the top of Ancient Thira from Perissia.
I've also been to both Naxos and Paros. I probably preferred Naxos but I did like Paros as well. The beaches in Naxos were great and as others mentioned the harbour front in Naxos town is one of the best. Not to mention it's a large island with plenty to see so I would suggest a car rental for a day or two to explore inland. In Paros we stayed in Naoussa which is a charming little town that had lively nightlife. When I was there I found it less touristy than I expected. I saw some nice beaches in Paros but they were not really convienant to Naoussa.
The other Cycladic island I've visited is Syros we found it very relaxing and stayed on a lovely beach but the town was a little quiet but I'm sure more nightlife would have been found if we stayed in Hermoupolis.
You may also want to consider seeing some of the mailand especially around Nafplio and Epidavros. Car rentals are easy in Greece and the roads around that area are good.
Whatever you decide I'm sure you will have a great time in Greece!

Thanks for all the great replys everyone. Now I am wondering about hotels. We are trying to narrow down island and I have found some hotels that I wanted to see if anyone had a review.
In Santorini we are looking at the Scirocco Apartments and the Villa Ilias. In Athens we were looking at Hotel Adonis. Ios we are looking at The Hotel Far Out Village, Ios Palace, and the Liostasi Sun Club. Crete we are looking at The Althea Village Hotel and the Sirios Village both in Chania.
If anyone has any info on anyt of these I would sure appreciate it!
