Need advice for Normandy/Britanny trip - where to stay/logistics

My suggestion is to look at what the various companies have to offer, compare them to your interests, and then decide if you want to do one or more of them.
If you decide to do an organized tour, I'd suggest you make a reservation in advance, as long as you make sure you can cancel it beforehand with no penalty if need be. You could do that last year when we were there.
I'd suggest you spend the first day seeing the Bayeux Tapestry, which takes less than a hour (They give you an audio tour and you pretty much have to go through at the pace of the audio. They said you could pause the recording, but my Pause button didn't work!), as well as seeing other things in town such as the WWII museum, perhaps the Cathedral, and other sights.
Then spend one day going to Honfleur (I'd stop by Deauville on the way back), and at least one day on an organized tour (if you decide to do one). That leaves you one more day to either see other D-Day sights that you missed or to do something else, such as go to Caen and see the Peace Museum.
Enjoy Normandy! And make sure to drink some Calvados!

We did reserve in advance. We were scheduled for the full-day tour, not the private tour, but the other couple that reserved never showed up so by default we were on a private tour. It was great - incredibly moving and very informative. 8 hours seems like a lot, but it really wasn't. At the beaches and cemetery in particular you want to have enough time to explore and reflect at your own pace and the full-day tour allowed us to do that.
