If you dont need a fancy setting, just follow all the artisans(the countless day laborers refurbishing homes) at 2pm. It seems to be their favorite lunch. Many of the small markets have a deli in the back where they are slicing fresh Pata Negra. Only a slice or two in a sandwich full of lettuce and tomato. Yum!

The best quality ham comes from the race Cerdo Ibérico. This pig is dark skinned and black hoofed, thus the name "pata negra" applied to this race; but this name is used less every day as there are lower quality pig races with black hoof; and also some iberic subraces with pale hooves. To put it simple: order Jamon Iberico. Best quality is "de bellota", fed mostly with acorns in pastures, then "de recebo", acorns and feed; finally "de cebo", fed with feeds and pasture grass.

Excellent info ..thank you all. Last time we did go into a deli an buy some and just ate it as we were strolling along.
Joselle - was hoping you could recommend a restaurant where we can have a nice platter and a bottle of wine. Thanks for the tips on what kind to order but most places we saw didn't give a choices such as de bellota.

OK...here in the US it is far too expensive to use in a sandwich! But next time I am in Spain......
I have never had a Subway sandwich so cannot compare!!
In Spain I have had bellota ham only sliced on a plate at tapas bars. I bring some home with me and serve it the same way. But you probably know that we can now get it here in the US, at prices topping $100 per pound.

It was about 20 E/kg, and I would say that Spaniards couldnt afford it unless it was in a sandwich.(they dont earn much)
But ya know what? It was really good in a sandwich. I think I bought 4 sandwiches for our group for 20ish Euros( including some juice /water and wine too)

Frank, if it was only 20 euros/kg ... it wasn´t "pata negra" or ibérico. It was probably a very normal serrano ham (sounds too cheap for me), and using the real thing for a sandwich sounds like a sin.
Mystic, Josele has explained quite well the differences.
I would look for places advertising "ibérico", I feel is the name we use more often.

My place in Malaga is La Dehesa in Alameda Principal, near hotel Venecia (by the Marquis statue). It may not be the best iberico ham in town, but it is good, and reasonably priced.
Other places (not restaurants) for ham and wine (and many other things) along Larios street and surroundings are El Trillo, Strachan and Gorki.

The US price is wayyy above the price in Spain. Its just a pig that eats acorns, so dont go too excited. Here, order a whole ham for 75 Euros
