Looking for recommendations on Provence/Luberon/Rhone Valley

Looking for recommendations on Provence/Luberon/Rhone Valley
The wife and I are spending 17 days in France between June 27 and July 13. We're flying into Nice from New York and spending 4 nights there to check out the surrounding riviera. Towards the end of our trip, we're spending 5 nights in Paris from July 8 to July 13 when we fly back to New York from Paris.
My question is about Provence and the Rhone Valley. We have 7 nights to do this and want to have a good mix of rustic living in the countryside and wine tasting. We are leaning towards spending a few nights in Luberon and checking out the surrounding areas, but don't want to spend all 7 nights there. Can we do a bit of a road trip, with 2 stops (4 nights in one location, and 3 in another), while we check out the surrounding areas of each stop?
The web is overwhelming, and we're at a loss for what to do. Any suggestions are very welcome. We're going to rent a car for the 7 day stay in Provence or wherever we go, and would ideally like to take a train back to Paris after dropping the car off. Thanks in advance for your expert help!

What do you want to do in Burgundy? Beaune, IMO, is worth one day, but it's a good base for exploring the neighboring wineries--for which you would need a car or a tour. Otherwise, Dijon, a beautiful city where you can get the TGV back to Paris.
