We were concerned that many things would be closed in Paris when we were there for Christmas... we had no issues finding open places to dine.
We had dinner in the Latin Quarter at a Greek place that was packed...
I would be aware of the weather - it turned very very cold when we were there...even snowed! It was bitter cold the day we went to Versaille...

I don't think anyone would have trouble finding a place to eat in Paris around Christmas. However some of the specific restaurants the OP has listed may be closed.
