We enjoyed the Manior Les Minimes in Amboise very much. Not really a B&B but a wonderful old manor house that has been made into a hotel. Breakfast is served (typical French breakfast) but at extra (and reasonable) cost. You don't say what you want to pay so this may or may not be for you. Amboise is a good town to base yourself in for touring assuming you have a car.
