Vitis Winery and Popic Winery in Lumbarda are great (at least they were in 2019) and next door to each other. Also, Explorer Family Boat offers amazing tours (includes wine and food) - Goran, the owner is awesome.

We stayed in Korčula for a couple nights last summer. For wine, definitely look into Lumbarda, it’s super close and known for Grk wines. We did a casual bike ride there and just stopped at a couple small wineries, really relaxed and scenic.
Massimo bar at sunset is fun (it’s that tower you climb), and for dinner we liked Filippi, nice terrace overlooking the water. If you want something a bit quieter, walking along the old town walls in the evening is honestly just as good as any tour.
We also checked some ideas here before going and it helped us shape those slower days a bit.
