Italy on a budget
Looking to plan a trip in 2031 but am already seeking your top destinations and travel methods hotel advice and restaurants not to miss! I do love the beach and would love to see conque terre and Venice and Rome for sure.

Somehow, I doubt that you meant 2031. Perhaps 2023?
Until you have your itinerary worked out, it is useless to offer hotel or restaurant suggestions.
The itinerary depends on you, how long your trip is and what you want to see and do. Come up with a rough plan. Post it here and get suggestions
Example:
Arrive Venice (1/2 day)
Venice, 3 nights (2 full days)
Cinque Terre, 3 nights (2 full days)
Rome, 5 nights (4 full days)
Take train in between.
It will take most of a day from Venice to Cinque Terre and most of a day from Cinque Terre to Rome. That makes about a 12 day trip right there, just to give you an idea. It can be slower or faster, include more and different places, etc. all up to you.
Everyone is on a budget and what is a generous budget for one person might seem like scrimping to another. I see posts where people want to keep their hotels at under $800.00 per night and others who can’t go over $150.00. Both are on a budget. So, you really have to be more specific to get recommendations appropriate to your needs.
When is your trip? That will also affect costs.
IMHO, Italy is more about Food, Art, History, Architecture and beautiful landscapes, not so much beaches. Though they have beaches, they are nothing like the Caribbean or the Gulf Coast of Florida.
Get some guide books. Start with Rick Steves and Fodors, perhaps National Geographic.

The first thing you need to figure out is your budget, and then you need to do some very basic research into costs. Costs of lodging, transport, entry fees, etc., can all be found online, and food costs are easy to control. You can't begin to plan an itinerary until you know how many days you can afford to travel.
