You should definitely go whitewater rafting if you're going to be in Interlaken. Check out Alpin Raft: http://www.alpinraft.ch/ for a great time! The guides are amazing; it was definitely a highlight of our trip.

Rather than staying in Interlaken, take a look at Wengen, Murren and Grindelwald, all up in the mountains.

For some reasons, Interlaken is not a favorite with most Fodorites. Only Palenque and the undersigned would back the much-maligned town. On a recent visit, we took 5 daily train and cable trips to Wengen, Lauterbrunnen, Grindelwald, Murren and sites in between, but we elected to stay in Interlaken (for our own reasons). We were more than just satisfied with The Goldey Swiss Hotel on the banks of the promendaded side of the colorful River Aare. There is a footbridge next to the hotel that leads to the center of Interlaken and a 15 minute walk along the promenade takes you smack into Ost Station for your day trips. Book a balcony room and the Alp views are outstanding! Here are some pics for you:
