I looked up Gatwick to Paris via Ashford on die Bahn, and it shows a few Gatwick trips that coincide with a Eurostar that makes the stop at Ashford.

All but one of them involve train changes in France. I'd vote for getting to Waterloo as quickly as feasible and grabbing the next Eurostar to Gare du Nord.
