How do you pronounce Rivoire?

in Piazza della Signoria, Florence

We have enjoyed the best panne cotta ever here but I have never know for sure how to pronounce it.

It's not an Italian name, so I have always assumed that it was French and pronounced as it would be in French.

Transliteration without phonetic symbols is always a gamble, but here's the closest I can come to the French pronunciation:

reeve-war

The Italians may well have their own way of doing it...

Never mind the panna cotta, have you had their hot chocolate? To die for.

The correct name is panna cotta, that means cooked cream.
As for Rivoire, the correct Italian name is Riviera (that is a true italian word meaning coast).
