We stayed at the Millesime last May and I have mixed reviews. Although the hotel is nice enough and the location excellent and the staff helpful, I think you can get more value for your money. We also stayed (on the same trip) at the de Lutece on Ile St Louis. It was about 50 euros less and we liked it better. I'm happy to answer more questions if you like -- post here or email me directly. These choices are always somewhat a matter of personal taste.

I agree with Marilyn; the Millesime's best quality is its location. The hotel is certailnly nothing special.
I have not stayed at Saint Beuve. We now stay at the Artus Hotel (fmrly. Buci Latin) and have always been very happy there.

My wife and I have stayed at Le Sainte Beuve and were really very satisfied-very friendly desk, nice location in 6th and close to Metro. On a recent visit we stayed at Hotel Pas de Calais which is also very nice and excellent location. Check it out. We are going back in October to either of these.
