Churches won't be shut down; services are usually morning and then late afternoon 4pm or later, so if you want to tour a cathedral like Notre Dame, I would expect you could do that in-between. There are some concerts in churches in the afternoons, vocal or classical music, perhaps holiday-related but not jingle bells stuff, more classical. You can find these concernts listed in local entertainment guides. There will be some restaurants open, no doubt, probably ones in the hotels might be a good bet. They do have an ice rink in front of the Hotel de Ville, that might be open, but I don't really know. I am pretty sure the Eiffel Tower is open every day of the year, also. The countryside? less open than in a major urban area, I would guess. Most guidebooks include opening hour information on major monuments. You can also get info on the major ones at www.paris.org/Monuments or try www.intermusees.com (the latter site is for the Museum and Monuments card, most of the list/links are museums but there are a few monuments in there, also, like the Arc and the Pantheon)
