Hi Shay
Good decision. I would go to Tuscany-My favorite Italy destination ( 4 hour drive from Venice-did it in reverse 2010) for the 6 nights ( May 16-May 21). I would spend 3 nights in north Tuscany - North of Siena in the Chianti area and 3 nights in south Tuscany near Pienza.
In 2010 we stayed in north Tuscany at

Great dinner in nearby Castellina at Restorante/Pizzaria Tre Port and the best Gelotto in Italy at Antica Delizia.

There are so many things to see in in Tuscany-Florence, Siena, hill towns, Abbeys, .scenic drives, etc.
From Pienza you can drive to Salerno in 4-5 hours. You could also take a train from Orvieto to the south via Rome.
