Thought about eastern Peloponnese? Old city of Nauplion, Ancient city of Mycenae (UNESCO), Theatre of Epidaurus (UNESCO), Medieval city of Mystras (UNESCO), walled town of Monemvasia and Elfonisos beach. Check them out!

Don't forget to check out the low cost carriers in Europe. There are so many cheap options out there, and sometimes traveling further may not be too much more expensive. Another tip is to use https://vamo.com to get a quick idea about the cost for all the different options. You can add the cities you want to visit into one trip, and it will come up with an optimized plan for you.

Barcelona scores on the architecture and food fronts, also great views from the parks on the hills, and some excellent museums devoted to modern art. It has beaches - nice for sunbathing and/or cooling off occasionally, though not a snorkelling spot particularly that I am aware. It's a world class city and one of my favourite destinations.
I personally think that if you are not doing Mexico then you shouldn't being trying to recreate the all-inclusive experience in Europe, rather embrace the change with the focus on history, architecture and cuisine as you've hinted in your OP. As such I would respectfully suggest discounting anywhere that is a beach resort first and foremost.

Have you considered the cities along the Amalfi Coast in Italy? Or the Cinque Terre -- touristy but lovely. And Venice, of course. Italy is FULL of romantic cities and towns. We honeymooned there ourselves and loved it. We're planning to go back for our 5-year anniversary and explore more. Our favorite spot was Orvieto -- not on a beach but it's very lovely and scenic countryside. It all depends on what you're looking for.
