Hamburg has a really fine zoo and botanical garden. We enjoyed both very much, along with a boat trip around the Alster and a visit to the many beautiful churches. You can make a number of day trips from the city; a popular one is to Lauenberg.

I'm sure your son will have quite an agenda for you since he lives there.
Lubeck is a great city for a day trip from Hamburg. Here's a great restaurant for lunch. Very historic with lost of memorabilia: http://www.schiffergesellschaft.de/html/english.html
Also, be sure to take a canal boat trip.

Hi,
in Hamburg a boat tour of the port is a Must.
I agree with the other posters, that a canal tour is also worthwhile (through gardens of stately homes). Also a visit to the Zoo called Hagenbeck (it is one of the oldest zoos in Germany and privately owned) is nice.
You might want to climb the tower of St. Michael church and admire the organ (if you're lucky it is being played) down in its main building.
For bad weather a visit to Kunsthalle museum right next to Central Station might be considered.
There is also a pretty cool interactive museum called Hamburg Dungeon in Speicherstadt giving you some thrilling (and scary) insights into medieval Hamburg.
If you like miniature railroads, there is a huge one right next to Hamburg Dungeon.
The Botanical Garden in the city center mentioned by Underhill is called Planten un Blomen and is close to the fairgrounds.
A visit and tour of City Hall is quite interesting, too.
Plus, there are great shopping opportunities in one or more of the various shopping arcades.
For daytrips you might consider Luebeck, which indeed is fascinating as it is so well preserved.
Also the towns of Lueneburg and Stade might be worth it.
There are good beaches at the calm Baltic Sea, which will only take you between 40 min. and 1.5 hrs to get to (e.g. in Timmendorfer Strand, Groemitz, Boltenhagen).
Also a trip to the North Sea Island of Sylt may be worth considering. It is very nice in all seasons (rough climate) might be worth considering. You would need to spend one night there, though, to avoid too much of a hassle.
If you truly love Volkswagen, you might want to make a daytrip (long one) to Wolfsburg, where their headquarters are. They have a pretty spectacular amusement park/ museum combination there called Autostadt featuring museums of all brands of the Volkswagen Group (VW, Audi, Skoda, Lamborghini, Bentley, Seat) plus guided tours of their factory.
It is some 220 km from Hamburg, driving time est. at a little less than two hours.
Should you need restaurant recommendations or suggestions of places to stay (I don't know whether your son will be able to accomodate you all), do post. I am living in the city and have posted a few times already here on Fodors.
Cheers
