Guys trip!
Myself, aged 55, and my two sons, ages 21 and 24, as well as my older brother and his son, aged 24, are planning a guys trip to somewhere in southern Europe for about two weeks in August. We are considering Croatia, Italy and Greece but I need some help in deciding which country to go to and where in each country we should travel to. We want a vacation filled with sightseeing and also time to unwind at beautiful beaches and the hotel pool but also go somewhere where younger people go as well.
Where would you recommend we go?

Three-sided die? All of those places have what you are looking for. Given covid requirements are the same by then, I would let flight availability be your guide. Croatia is probably the easiest place, then Italy, then Greece, because of the sheer number of choices in deciding where to focus.

You will get far more helpful answers if you do some research first. You can start with this website's Destination pages. Use the information already there to refine the group's interests, and then ask specific questions. Not only will the advice (volunteer, remember) be more helpful, you will have some perspective to understand it .

I recommend not only Greece, but just focusing on the island of Crete. It has it all - history, beaches, hiking, other outdoor sports - there's even a kitesurfing culture here. It really all depends on what you want, but it will be hard to top Crete in my opinion. One of the best, most memorable hikes in Europe is here - the Samaria Gorge. It's 11 miles (downhill, then flat if you do it right) and then you empty out into a village that has a taverna with delicious food and a black sand beach. You take the ferry back to the Chania area. There are museums to visit, places to go out drinking, etc. There are a lot of resorts too, and plenty of hotels with pools. Many of the beaches have the ability for you to sit down and lounge and also order some cocktails while you're there...
