Sounds good. Maybe another time you'll get ooop north.
If I was still in my old house I'd nearly be on the route - I used to live in Soest, which has some big sand dunes.
If you get the chance have a look at the Pyramid van Austerlitz in the woods by Zeist.
Doorn is a nice town as well and has Huis Doorn, home to Keizer Bill after WW1. Both are Utrechtse Heuvelrug NP. Don't ride the mountain bike routes marked with the international symbol - you need a permit for those.
Radio Kootwijk is worth a visit too.
I know what you mean about P&O. Tricky one. We'd probably take the Newcastle ferry for a long crossing to avoid using them tbh. Luckily we have no plans to visit the UK so far this year so aren't facing the dilemma. DFDS cross channel ferries aren't great, the tunnel is expensive and chaotic, and Stena is long and expensive. Ho Hum.
By train it takes nearly as long to get to Rotterdam to pick up the Eurostar as it does to get from Rotterdam to London. And then we'd have to get to family from there.
Edit: Forgot the Dutch Military museum in Soesterberg! Not sure if you still can but you could ride bikes over the old runways of the Air Force base.

Hi, sorry for the delay in getting back to you but there have been a few issues.
1) P&O ferries, booking with them is a morally difficult one but I see that the Hull to Europoort has no real options and hence has recovered to about 50% of pre-covid demand. All other ferries (where P&O) have alternatives they are doing terribly so we had to lower our standards and go with them
2) Cat boarding was a major problem as many catteries have closed due to Covid and hence many are booked 6 months into the future, luckily...
We have set a target of Park se Hoge Veluwe (which we've been to twice before) as our furthest point and we are using the hollandcyclingroutes.com/online-cycle-route-planner which takes us roughly Europoort, Ridderkerk, Nieuwegein, Zeist, the Park.
Coming back has yet to be discussed but I think we might drop down to Nijmegen and then Tiel, Dordrecht, Europoort but all the time trying to visit places like Brielle rather than like Eindhoven.

And back: Arnhem - Nijmegen, then along the Waal river to Gorinchem, Schoonhoven, cross the river for Kinderdijk and Ridderkerk and approach Europoort via Oude Maas river, Rhoon, Nieuwe Beijerland crossing the Spui and via Spijkenisse to Rozenburg
