It would help if you gave some kind of price range. We just recently stayed at the St. Thomas D'Aquin Hotel. It is a 2 star which is right on the border of the 6th and 7th districts. It is an excellent location and it is close to restaurants, shopping, the Louvre, Seine River, Luxembourg Gardens. We payed 120 euros per night but it doesn't have AC, this could be an issue in July. I would not hesitate to stay at this hotel again. We really enjoyed it.
For an itineray, look on Fodor's destinations for ideas and also read other's trip reports. It also helps if you tell people your iterests food, museums, outdoor activities like parks,etc.
