Gazpacho is from Andalucia There is a Gazpacho Manchego version too.

Only order paella at lunch... it's too heavy for supper.. A friend just got back from bilboa and raved about the churros with dark rich chocolate for dipping..ahhh We are gong back to B arcelona in September..

A basic tour could be:
* Shellfish from Galicia.
* Fabada (beans stew) from Asturias
* Cogote de merluza (grilled hake) from the Basque Country.
* Pimientos rellenos (red pepper stuffed with meat) and espárragos (white asparagus) from Navarra/La Rioja.
* Cocido (chickpea stew) and roast suckling pig or lamb from Castile.
* Gazpacho (cold tomato soup) and rabo de toro (bull tail) from Andalucia.
* Paella from Valencia
* Escalivada from Catalonia
...

Desserts: crema catalana, arroz con leche(sugared rice and milk pudding)...

Jamón ibérico is mostly from Extremadura and northwest Andalucía.

In any case, our cuisine is so rich and different that I wouldn´t dare to choose a single dish from a particular region.

Yes another vote for Boquerones. Also Chopito (fried whole baby squid), red peppers on crusty bed and anchovies. Washed down with cerveza in a lively bar hosting a flamenco performance - Maria, Maria =D>

Pimientos de Padron! They are little green peppers, flash fried in olive oil. They are from Galicia, but I have eaten them in Barcelona. If you see them, do not pass them up.

In Barcelona I also loved the canneloni stuffed with meat - a very rich and delicious dish of the region. Yum.
