We have been in Florence last summer. Our itinerary included (not in the order of most important places) Bargello, Santa Maria del Fiore, Museo del Opera del Duomo, Gallery of the Academy (David), Uffizi, Palazzo Vecchio, Palazzo Pitti and Boboli Gardens, Santa Croce. Florence is relatively small, and you can walk everywhere.
As far as restaurants go, we had a list of "must go", but never used it. Just see where the locals congregate, and you will not be disappointed.
Small, family-run restaurant with good food and pleasant ambience, Osteria Cinghale Bianco, on Jacopo "street" (forget It. word for it!); cross Ponte Vecchio to "other side", make first right onto Jacopo. Restaurant is down the street couple of blocks on left. Reservations were necessary in May, altho we just made them by dropping by earlier in day. Bon appetit! (sorry, Fr. is my 2nd lang.; buon appetito?)

skip the Pitti Palace, oddly placed ostentatious rooms of crusty mismatched art. Spend your allotted time there instead added on to your time in the Boboli gardens. Hike up to the coffeehouse for beautiful views of the duomo.

Also, about 2 blocks past the Pitti Palace is the Anthropology museum, has amazing waxes of the body and systems of the body used to train doctors made in the 1500 I beleive, artistic, not gross, and scientifically amazingly detailed and accurate!

Eat at Buca San Giovanni's across from the Duomo towards the Baptistry.

"Il Grigio Chianti, Reservo" is an excellent local choice very reasonably priced.

Pat,
One of the best meals we had in Florence was at a small, communal table place just down the street from the Doumo. It's called La Moussache. (sp?)

Your as likely to be next to a tourist as you are a local bus driver or senior citizen. Great hearty food and very reasonable prices.

Another great spot is La Girostra. I believe our meal was about $100 Euros with a decent bottle of wine. My suggestion would be to try some unique local dishes. I had a great Wild Boar Ragu with Tagliatelle and a really nice rabbit dish.
