Your last question was "Which country should I focus on to achieve my goal?" and I will address that. Unlike some posters, it certainly not my prerogative to question your motive for the trip but I will share part of what my wife and I did. We have actually been to Europe twice within the last four years and have planned another for next year.
We love all of Europe but in this case I suggest France. First spend a week in Paris. Afterwards rent a car and get a taste of the many other smaller cities and especially spend time in the small medieval towns. I would work my way east visiting towns like Giverny, Rouen etc on the way to the Normany coast.

Sorry, I hit a button by mistake and only part of my reply registered. There are lots that your husband would appreciate on the Normany coast. While there visit the little town of Honfleur and have a seafood lunch there. I found it a magical place. A visit to Mount St. Michele is a must but pick any small town and just simply enjoy the restaurants and the people who are so very friendly we found.
While we did use hotels in many places we experimented with trying bed and breakfasts and found that experience fantastic. We used bedandbreakfast.com and spent a lot of time checking the reviews. it was a wonderful experience to get to know many of the families that run these places. We had our maps but made sure that we took a GPS with Europe maps. Garmin was great.
I hope this was helpful to you and best of luck. Your husband will appreciate the trip. The US has a lot going for it too but visiting Europe certainly provides a different perspective on life. Good luck.

I am just browsing through some older posts and wow...that is some litany of wishes for a trip...this event sounds more like immersion therapy rather than a vacation. Don't know if the trip will ever get off the ground but I'd leave the guy at home.

and in addition I do agree with Moonbaby...most of her observations seem valid concerning differences but unfortunately things are changing in Europe too. She is right on about the "green" issue...many many decades ago in Europe it became clear to me we Americans just over consume. In even really nice hotels you get say 2 towels per person...and they had various ways to make sure lights were not left on...bags at stores not paper and on and on. One poster called it limited consumption which is a much better pro active approach and has been going on in Europe long before any "recycle bins" here in USA.
