Did you look at SBB and punch in from Luzern to Zermatt? The trip takes a little over 3 hours if you go Luzern-Bern, Bern-Visp, then Visp-Zermatt. Once in Zermatt you need to take the train up to Gornergratt for the best views, which is another 30 minutes or so. Its pretty long for a day trip, but I should talk...we did it on the way from Montreux to Wengen, and spent about 5 1/2 hours on the trains that day (not counting Gornergratt). And I loved it, but that was in large part because that was one of the clearest days we had. Oh, and that's without trying to get to Glacier Paradise too, which is definitely too much for a day.

There are so many good mountains nearer to your stay in Luzern, I'm not sure I would do it...you can do Rigi, Titlis, Pilatus, Stanserhorn...
