Before you start dropping (or adding) cities, reallocating days, re-ordering your itinerary.....
Have you listed everything you want to see in each destination? Have you calculated the time you'll need to see all of these sights (noting the days when things are open and closed)? Have you taken into account how long it takes to get from one place to the next? You need to go through this research process before you can decide/figure out how many days to stay in a place.
Keep in mind that 2 nights in a place is only one full day of sightseeing. Three nights is two full days. Etc.

eheather: I have been to and through Amsterdam several times and love it. However, I would not spend more than three nights there on this first trip, unless you're planning daytrips beyond the city. I would add at least one of those days to your stay in Rome, and would not cut either Florence or Venice from the itinerary. Florence has amazing art at every turn, by Michelangelo, DaVinci and others. To get the most out of your time in any of these cities, try to pre-book admissions when you can (to the Academia, Uffizi, etc.), so you can avoid standing in lines.
Can't comment much on time in Germany. That may depend on your family's locations. While you are in Munich, I would suggest spending an extra day, and taking a daytrip to see the Upper Bavarian highlands including Neueschwanstein, near Fussen. Vienna, Salzburg and Prague are also great cities to visit if your railway connections take you near or through.
I do like kybourbon's suggestion of flying into Paris, and out of London.
