Eastern Malaga to Nerja:
Take A7 (E-15), direction East, Almeria. In about 15 min. take exit 258 (Añoreta, Macharaviaya…). It is tricky as it is right after a bend to the right. Be aware when you see the golf course on your right after passing Rincon de la Victoria, keep right. Take N-340 which will take you down right to the beach. Turn left and drive general direction East. You’ll see empty beaches on your right (avoid weekends!) with easy parking. Arrive to quaint Benajarafe. Now it is all a straight line, the old coastal road. In 15 km. You arrive to Torre del Mar, the busiest spot in the area. Cross it and in 5 more km. you are in Caleta de Velez, the best fresh fish in all Malaga, it is a fishing harbour. If you drive along you cross Algarrobo Costa, Mezquitilla, Lagos, El Morche (all small) and then Torrox (big) and finally Nerja. This is the coastal picturesque route, fish restaurants (Merenderos, chiringuitos) on the beach all the way, though I’ll suggest only “La Cueva” at Torre del Mar, an institution in the place, big, tables on a wide sidewalk. Fried fish. And Bar Restaurante Ramos at Caleta de Velez, on the main road to the right. Best fresh fish and shrimps, shellfish, etc. You can always drive A 7 straight to Nerja, 60 km. That will take you about one hour. Very near Nerja you have Frigiliana, a must.

Semana Santa in Sevilla will be an experience! The first time we were in Spain (20yrs ago) we got caught in Semana Santa festivities and were completely unprepared for it. We were winging-it and had a hard time finding hotel/restaurants. I hope to revisit Sevilla during Holy Week sometime when I'm much more prepared for it. This year we will be in Valencia, where the processions are not as famous as in Andalucía.
I would suggest you contact the apartment owner to make sure that roads will be open (or which) at the time of your arrival. If I remember correctly, closures begin around 2:00PM. You might also want to plan meals and make reservations as many (many!) restaurants will be closed. The most practical thing is to assume that everything (including some museums and tourist sites) will be closed from Wednesday afternoon to Tuesday morning (Monday is included in the bridge holiday in Spain).
Maybe in Sevilla it's like in Málaga where you can reserve space in a private balcony overlooking the procession, if so, I would do this in a heartbeat. These processions are something else and they go on for a long, long time.
I would also encourage you to pre-buy the Alcazar and Cathedral tickets. Last time we were in Sevilla (2016) it was low season and the lines went around both buildings. Since we had 5 days I had a chance to go back to the apartment and managed to get space for the very last day of our visit. We included a visit to the Royal Apartments and enjoyed it very much. The ticket to the Cathedral we bough at the church of El Salvador; combined entrance sold with a much shorter line (and the church is incredible!). We also enjoyed very much our visit to the Palacio de Las Dueñas and flamenco at Casa de la Memoria.
Since you have been in Madrid several times maybe you have visited the 'biggies' and have time for some of (my absolute favorite) small museums: Museo Sorolla, Palacio Cerralbo, Lazaro Galdiano, Museo de Arqueología. I liked very much the flamenco at Tablao Cardamomo.
Since you state that you like to hike, maybe you can go to the Caminito del Rey from Málaga. It used to be a dangerous hike but it has been 'tamed down'. We were both seriously sick during our month-long visit to the city, and by the time we recovered enough to consider hiking, there were no permits available! So another thing to pre-book well in advance if one is interested. There were 2 restaurants we particularly liked in Málaga: El Cortijo de Pepe and Casa Mariano.
