Jeneau, Here's a few that I like with different price ranges:

Hostaria Borromei (Moderate)
Via Borromei, 4
20123 Milano, Italy
02/86.45.37.60 ph
(closed Saturday and Sunday?)

Matarel (Moderate)
Corso Garibaldi 75
011-39-02-65-42-04 phone
A traditional Milanese trattoria located in the Brera quarter (on the Northern edge).

San Bernardo (Expensive)
Via GA Borghese 14
011-39-02-331-90-00
A Milanese ristorante known for its risotto alla Milanese and another local variation called risotto alla Milanese al salto (risotto is panfried and slid onto a plate like a frittata but isn’t greasy). Also has great osso bucco and a required chocolate soufflé.

Trattoria Milanese (Budget/Moderate)
Via Santa Marta 11
(5-minute walk from Duomo near Piazza Borromei)
02-8645-1991 phone
Classy family-run place with local clientele. Milanese ambience, traditional cuisine and surly (?) waiters. Reservations necessary after 8:30 pm.
