Hi SoulofaDachshund.
What are your interests/do you want to get out of a day trip from london. I could only pick up on the fact that you wanted to see some countryside.
A day trip to Brighton by train from central london is very easy and in the summer Brighton will be lovely, you'll also get to experience a bit of the British seaside and experience a city that has a very different vibe.

But I agree with janisj - you really should see the major attractions in London first and save day trips for another time.
Don't miss:
Tower of London - go as soon as they open
Then take Cruise from Tower Pier to Westminster Pier/Big Ben
Westminster Abbey - verger tour
Churchill War Rooms - near W. Abbey
St. Paul's Cathedral - verger tour
British Museum
V & A Museum
National Portrait Gallery
The Crypt in St. Martin in the Fields (across st. from Nat. Gallery)

Eton (?) The public is not allowed entry to Eton College (until next year at the earliest)>
to clarify this the public always could visit the colleges as I have done several times but due to construction such visits have been suspended and will resume at the earliest in late 2015.

@theecoquest - I suppose we're not very picky, but I just spoke to my husband and he really would like to go to Bath if we could. I'm not sure why, honestly, he just likes the idea of it. He said, "I just want to see different types of old buildings," which I'm sure there are plenty of in London, but I'm not sure I'll talk him out of it. To be fair, museums have never really appealed to me, so I'd be happy if we only went to 1-2 in London...

Well Bath has some of the best intact and still used Roman bits in the country but apart from that very little of it is old, the Crescent, for example is only 1774 so relatively modern, roughly the time of your alliance with the French against the Empire (and just before the French government lost its head).

a marvelous homogeny and Bath is compact in its sights - the marquee attraction of course being the famous Roman baths - to me yes Britain's prettiest town by far - certain parts of Edinburgh exhibit a similar homonenous old style of architecture but as a city-wide thing Bath is unrivalled IMO.
