I can only answer for the Crowne Plaza City Centre. This is a very nice hotel and probably one of only a few with an indoor swimming pool, if that means anything to you. The building is relatively new, although it was constructed to be harmonious with its neighborhood near Dam Square and Centraal Station (easy walking distance). The rooms are decent-sized by European standards. One historic building has been integrated into the design and it houses the higher end restaurant. There is a club lounge that includes an outdoor deck on the top floor, which is a nice feature. For better or worse, it is close to the Red Light District, but we found it to be a good neighborhood to walk from.

Another hotel in the same class in that immediate area is the Sofitel, which is an interesting renovation of three historic "canal house-style" buildings.

We stayed at the Crowne Plaza City Center - a block from Central Station, from where lots of the canal tour boats also leave, 2-1/2 blocks from Dam Square. The Tram runs right past the hotel. We found it an ideal location.

Were able to walk to all sights and we had no problem walking at night, even thru alleys and all around - felt safe.

The room we had was very large with a 4-step-down into the main room. Be sure to request upper floors away from the bar or restaurant as music does radiate from below.

Can't comment on the Sofitel, but generally they are good properties.

We stayed at the American and loved the hotel and the location. It's right on the Leidesplein with its restaurants and shops and near the Rijksmuseum and van Gogh. (I wasn't crazy about the Dam Square area, a little too crowded for me.)

I definitely prefer the American. It's right on the Leidesplein and close to the museums, easy access to trams, on the canal, and far away from Central Station to be away from the messier aspects of Amsterdam. When I splurge, that's the place I choose. The cafe is beautiful with a great coffee and reading bar.

Depends what your interests are. The Crowne Plaza is located near the Centraal Station and this makes it a good location if you are interested in day trips, canal tours, making use of public transport, etc. It is also located near Dam Square, TRLD, Anne Frank Museum, etc. But it is also in a rather dingy neighborhood away from anything green and romantic (unless you think porn shops are romantic).
If you prefer more open spaces next to parks, the museums, Concertgebow (sp?), and less grime, then stay at the other. Personally, I would stay at whatever place had the better rates. Hope this helps.

The Americaine is a better location in my opinion. Near Vondel Park and the museums. The Central Station area as others have noted is seedy although safe. It's also good for people watching at one of the cafes in the Leidseplein area where it is located.
