The Croats emphasize neckties (they claim to have invented them) for men and lace for women, but Pat is right; there is not much in the way of conventional souvenirs (blessedly).
There is a small chain of shops at least in coastal towns (Hvar, Dubrovnik) called Aqua, which has nice water/beach related stuff. We bought a really cute beach/diaper bag for our granddaughte.
Another gift that went over well was Croatian brandy. You can buy it in stores or home-made in street markets. It is quite herbal and varies a lot from maker to maker, but we enjoyed it, especially the ones with lots of thyme.

Croatians like table linens and you can find them in most towns. Otherwise take a walk around in one of the markets (Split, Zagreb or Dubrovnik)and you will find something. I found some wild honey in the Zagreb market that my friends thought was the best they had ever tasted.

There is lavender and rosemary oil. Olive oil. Various types of brandies. Cds of local klapa groups. Various types of rakija.
And your usual assortment of standard tourist souvenirs - mass produced drawings, shot glasses, coffee mugs.
