I have been to all of the places that you mention and think that your itinerary is very doable. Il Cavatappi is superb and run by Giuseppe and Riccardo. Definitely make a reservation there. Varenna is certainly the prettiest and most authentic little town on the lake. Do not miss the two gardens next to your hotel. Hotel Du Lac is exceptional. Ask for room 12 which has a large terrace overlooking the Lake.
My one suggestion is - take your time. Don't try to see everything in one trip. One of the best things about Italy and really, anywhere you travel to, is the pace & tempo of the place. The best way to experience that is drink in hand and watch the world go by. You'll be surprised how many great things you will come across and come to you if you're not in a hurry.
