Couple of questions

Can I leave my passport locked in the hotel or should I keep it with me at all times? How do you carry the damn thing, it's like a book?

Can you take unmarked squeeze bottles of shampoo etc., as a carry on? Small bottles like you buy and fill from REI, Eddie Bauer etc...

There is no consensus how to handle the passport issue. Some are OK locking it in their room, some leave it in the hotel safe, some carry it at all times in their handbag, some carry it in a money belt . . . What you do is up to you (I personally carry mine in a hidden pouch).

You can use any sort of bottle as long as they are 3 oz or less. Labeled or not.

I've never carried my passport with me. It might depend on where you're going, but for most places it's not necessary. Undoubtedly, some will say you should. Bullocks.

Yes, small unmarked bottles are fine. I only label them in order to tell the difference between the items.

Make a copy of the page in your passport with your pic and information. Keep that and your actual passport separate as much as possible. TSA doesn't care about labels, as long as they are 3oz or under. I bought travel sizes of my favorite products a while ago and just refill those.

Never have carried my passport in over 40 years. They really are not that valuable to thieves anymore

Bottles through UK airports outbound must individually be less than 100ml. You'll find that the metric measure is used rather than the US oz.

do bottles have to be in a clear plastic pouch, or can I use a normal shaving kit etc.?

if they're in your hand luggage they'll have to be in a clear plastic bag

Whether you carry your passport or not is up to you. There is nor legal requirement for you to carry it around for ID or anything.
