Copenhagen in late May or June
My travelling companion is eager to spend some time in Copenhagen, a city new to both of us. So... we're starting from scratch.
Would you please offer some suggestions for a 7 or 8 night stay, to include: favorite hotel/s, restaurants, sights, and two full-day trips outside of town?
There is also a possibility that we would combine Copenhagen with a second week in Stockholm, another first for us. Cost is not an issue.

The hotel is a really quaint boutique property that has an amazing breakfast and the most comfy beds ever. They have 2 properties, the Bertrams is nicer.
Bicycle rides.
Side trip to Malmo (a short train ride).
Backgammon games (or whatever board game) on rainy days in the cafes.

For the day trips I would do one day in Roskilde (Viking Museum, a very interesting church whose name escapes me, and just a nice town to walk around in), and a one day touring castles - we did Frederiksborg, Fredensborg, and the Helsingor "Hamlet" castles, all by train.
We stayed in an apartment since hotels were so expensive there (and the apt was a dump!) and I can't remember restaurant names, although the food was excellent everywhere we ate.

Lunch at Boef & Ost (traditional danish open sandwiches or herring buffet, beer and snaps) in a lovely old square with cobblestones. Danish pastries or cake and coffee/tea at Conditori La Glace. Trip to Gilleleje for fresh smoked herrings on rye bread and to sit around a typical Danish fishing harbor.
Take a sidetrip to the island of Bornholm. Visit the Carlsberg Glyptotech.
