By the way, if you buy a bottle of ice wine, make sure it's made correctly, with naturally frosted grapes. Apparently some winemakers cheat by tossing grapes into a commercial freezer. In Austria, only naturally frosted grapes can be turned into eiswein. I don't know what the rules are in Canada, but the less expensive ice wines probably aren't natural. So buy a bottle or two only from a store or winery you trust.

Any wine sold in Canada as "Icewine" must meet the strict standards of the VQA (Vintners' Quality Alliance). There are some fraudulent knock-offs made in China and the USA, but so long as the wine has the VQA sticker, it's the genuine thing.
