The Pilar is really important in Zaragoza, but outside of that, it is not made a big deal of. In Madrid there are some patriotic things and in churches throughout the country there will be flower offerings, but Zaragoza is a madhouse with jota singers and dancers, parades, all night partying, great ceremonies, and a truly festive atmosphere. I will be there for it this year and cannot wait!
As for the bullfights, the farthest I found goes to September:

I buy tickets a few days in advance if it is going to be a good matador, and day of if I don't know the guy. I have never been shut out, but trying to get them now will save you some stress.
