The best Flamenco is always found in Madrid because that is were the best dancers go to train.
Next is Seville.
Not Granada.
I saw Flamenco is Seville. I can't remember the name of the venue, but we had reservations. We only saw the show but some people elect to have dinner along with the show.
Years later, I saw one of the dancers in a video on the ARTS channel.

Every 2 years there is a Flamenco Festival held in Seville... I believe it's a month or more long and a friend who attends says that the most amazing Flamenco, players, singers, dancers, can be found at every turn.. in backyard clubs - for pittance; in vacant lots, and of course in the old city sites and the best clubs. Unless you go to one of the chi chi clubs, you just fit in where you can, no rsvp.
I think it occurs throughout September? This year, or next - I couldn't tell you!

I have gone twice to see flamenco at Casa Patas in Madrid. Nice venue, both times I saw very good dancers and musicians. Went to the late show the first time on a Saturday night and it was very intense. I had dinner there on a weeknight the other time, and thought it was quite good; and if you eat there, they give you seats up front for the show. http://www.casapatas.com/

PLease excuse the typos I am short on time right now. Again I suggest doing a search I have spent quite a bit of time on Fodors and there is alot there to read on flamenco that is helpful.
While you are in Madrid there is a major flamenco event known as the Suma Flamenca which is a series of concerts starting May 17 through part of June

Before departure dedicate some time to doing some homework: review these links and info, check the times, schedules and if available prices. Then when you get there be flexible. Reconfirm by phone (or ask your heotel to) any reservations you may have made in advance at a flamenco club.
Flying by the seat of your pants may get you someplace at the wrong time (too early in the case of a tablao) or you may not see the preferred artists and/or end up paying another cover charge, having to order more drinks or food
(which for me would be AOK anyway!)
Keep in mind not everyone will know about flamenco in Spain, a common misconception, so don't expect your hotel clerk to know wbat they are talking about. There is indeed alot to see and depends on your interest level and pocket book, and of course schedule.
Flamencos are artists in their own right, singers (cantaores) and gutarists NOT just dancers. However tourists usually wants to see a "show" with dancers, as well as singers & guitar. It is not unusual to have a show without much dancing at all especially if the singer or guitarists is the featured artist be sure to ask about that or scope it out on the web.
There are many venues for seeing flamenco: Penas (flameco social clubs, Tablaos (flamenco clubs more akin to nightclubs) and theater productions/concerts. Of course there are casual bars etc which are also great and may just play flamenco music not a show per se.
1 Flamenco productions in theaters will almost certainly guarantee top quality performers. Suma Flamenca is a great opportunity. Concerts are usually at least an 2 hours long. Although it will be argued by purists that true flamenco does not belong in the theater, in Spain "concerts" are top notch in general (again, at least in Spain, USA is another story altogether. I do not know where you are from?)

2. Flamenco nightclubs are known as Tablaos. Expect to pay $$. As mentioned Casa Patas is good and I actually recommend eating dinner there as Nikki said it helps get a better seat & the food is not bad.

Always go the laet shows, the second seating anywhere.
Another very popular but pricy Tablao (but I have enjoyed very much) Corral de La Moreria has some very good artists there while you are in town.

I remember reading the trip report by "Indian Couple" they enjoyed a casual flamenco bar called Lo Nuestro (on the list) in Sevilla.
I have had friends really enjoy shows at the Pena La Plateria in Granada in the Albaicin area but they are sometimes private, sometimes not.
