Befuddled and indecisive....
My son, his wife, my wife and I have booked an apartment in Rome for a week. From there we are headed for Florence. My son has to return to work on the fourth day in Florence. DIL continues on with DW and I. We are returning to the U.S. on 8 Nov from Paris. I have looked at roughly a bazillion apts/hotels in Florence/Venice and Paris. Am trying to hold the lodging to $200/nite for the three of us. Have turned into a rudderless wuss doing this. Questions..would you stay on in Florence, taking day trips, then bussing to Bologna and flying MyAir to Paris? or...go to Venice for a few days, then MyAir to Paris (arriving after 6pm...or, take a train to Paris (seems much more expensive)or, take hemlock
I know this is long and that you cannot ultimately make my decisions for me....I also know that the collective wisdom/capacity for friendly advice/experience on this forum ie vastly superior to mine..

I cannot comment on Florence or Venice. there are a few budget airlines to fly to Paris; easyjet and ryanair are two that come to mind the cost is very low and usually takes approx 2-3 hrs travel time. Luggage weight is very restrictive on these airlines, but the train takes way too long and cost way too much. Keep in mind that arriving in Paris after 6pm in November it will probably be night fall. Do a search for Paris apartments you should find several good recommendations here. Rentparis.com has some in your price range. Also, Hotel Bonaparte in Paris might work.

Befuddled as you are, it's not that easy to figure out what it is you're asking. I'll try...
When your son leaves Florence, I think you three should move on to Venice (by train). From there, you should fly to Paris.
I don't think you should find it difficult to find lodging in Venice (I don't know about Paris) within your budget.
We three stayed in this penthouse apartment for less than 100€ a night...

It's not clear how many days you have - so it's hard to reco what to do.
Four days should be enough for Florence including 1 or 2 day trips.
How many more days do you have?
If it's only 2/3 I would just train to Venice and do that.
I wouldn;t do Paris unless you have at least 4/5 days there - it's too frustrating.

In that case, I guess it depends what you consider spartan, but I can recommend this convent in Florence. The house is beautiful, you have access to all of it including a library and sitting room and TV room, and the bedrooms are interesting, but might be considered spartan.
You would also have to live with an 11 PM (or possibly 11:30 PM) curfew.
