Authentic places to eat in Florence

We will be in Florence for 24 hours and want to have the best experience possible in short time....what do you suggest for the most authentic places to eat and within a moderate budget.

Explain "moderate budget". Actual numbers required.

It is difficult to find a bad meal in Italy.

Our reliable old standby is Trattoria Angiolino, Via di Santo Spirito 36, in the Oltrarno area. The fiorentino is delicious and I am not a great carnivore. But do make a reservation, it is popular.

We enjoyed Ristorante il Paiolo, Via del Corso 42. Family-owned and operated.

Authentic Florentine food includes tripe served from a trippaio (tripe cart), but that may be a bit too authentic for most tourists....
