Pasteurization requires heating food to a certain temp for a certain amount of time, obviously this cannot be done with all foods. It also can be the irradiation of foods with gamma rays, which raises another issue , whichis very muchon the minds of a large percentage of the population. I'm sure what can be pasteurized ,is . Avoid what you think may harm you, but Italy is certainly one of the more progressive counties and I don't think you should have a problem.
You can even have problems going from state to state in the US, with all the e. Coli and salmonella infections , and other things we hear about happening here, I don't think this should really worry you unless you have an underlying condition which can't be ignored.
For some reason Americans think we are number 1 in everything , we are not . Millions of people are surviving nicely in Italy and elsewhere, i wonder if they worry as much as we when they travel to our country

So, scigirly and Kelly, whenever you order a green salad (insalata verde) in Rome, make sure you ask first if the dandelions are pasteurized.

Well well, Anti-Ben, I think that you'll find that most dandelions are indeed pasture "ized".
