the best cooking school in Paris is www.cooknwithclass.com
I took a class with my wife, It was great, lot of fun, good food, hands on class. The chef is nice and speak good english and some spanish (for me)... He has a full day class and also half day class. A must do in Paris.

We were unable to get a class with some of the ones mentioned here. We took a chance on the one mentioned by "ericestrada"--suspect he watched many episodes of CHIPS -- with Eric at Cooking with Class. EXCELLENT! Took Metro to Jules Joffrin in Montmartre. Eric met us and 3 other Americans at the stairs. We proceeded to shop at the market, making the menu on both the availability and our wishes. Went on to his cute storefront kitchen and cooked and ate and drank quite a bit of wine. Lesson was supposed to be from 9:30 am to 1 pm. We left at 3 pm.
We'll post more when we get home. We're using French keyboard so it's a struggle.
