Probably since these are regional trains and on regional trains you cannot make seat reservations at all i believe so i think the ticket Monte-Pisa would be all you'd need but ask when buying.
If going to the Leaning Tower from Montecatini-Lucca line get off at the S Rossore station that is a long stone's throw from this sleepy station. Pisa Centrale is about two miles away, on the other side of town. That said, i enjoyed the walk from Pisa Centrale to the Tower area, then got back on the train at S Rossore station.

Hi BK - Yes you can.
The only condition is that you have to complete your journey within the validity time written on your ticket.
For a local journey I think it's 6 hrs - if I remember rightly.
Hopefully someone else can confirm ...

Here are the rules as written on the Trenitalia.com website (Steve is correct):
The journey must be completed within 24 hours from validation (in Trentino, by midnight of the day of issue). For distances longer than 200 km, the trip must be completed within 6 hours from validation (in Lombardy within 3 hours, for distances of up to 50 km).
