Angelina's and Ladurée for chocolate - how good, how sweet?

For those who love who want to make the iced hot chocolate they serve at Laduree, here is the recipe!

<i>Laduree Iced Hot Chocolate</i>

3 3/4 cup whole milk
1/3 cup water
1/3 cup sugar
6 ounces good-quality imported bittersweet chocolate, finely chopped

12 ice cubes

Bring 3 cups milk, 1/3 cup water, and sugar to simmer in heavy large saucepan, stirring to dissolve sugar. Remove from heat. Add chocolate and whisk until melted and smooth. Refrigerate untill well chilled, about four hours. (Can be made one day ahead; covver and keep refrigerated.)

Mix 3/4 cup milk into chocolate mixture. Working in batches, blend chocolate mixture in blender until frothy. Divide ice among four glasses. Pour chocolate mixture over and serve.


I found this recipe in one of my cooking magazines while researching Paris. It's really wonderful and sinfully rich. I used Belgian chocolate for it.

I will update a little bit on my search for not so sweet, but very good chocolate.

On my last trip, I also purchased some dark chocolate at a very famous chocolate shop in Berlin. This is the one that has chocolate models of various monuments in the window. I think it's near Checkpoint Charlie. In any event, this was too sweet and I didn't find it that great.

Yesterday, since I had heard really good things about Scharffen Berger Chocolate (advertised as the finest American-made chocolate), I decided to purchase one very small, very expensive bar yesterday. Once again, I was disappointed by chocolate. It was too sweet, even though I had purchased a type that wasn't supposed to be.

So I'm thinking the hot chocolate at La Coupole made with Valrhona bars might be the best possible. I liked it all right at the time, as I mentioned, and from time to time I start thinking about going back to get another one. But maybe that's just a desire to go to Paris again.

for the best chocolate gelato this side of Bologna.
