There is a night service from Paris to Venice leaving from the Bercy station in Paris (near Gare de Lyon). The night services from Amsterdam would require several changes. I would suggest you train from Amsterdam to Paris and then go from there. Plane might be cheaper and would certainly be faster.
Check rail schedules at

From Amsterdam to Paris, either use a direct Thalys train, or take the hourly intercity train to Brussels then one of the half-hourly high-speed trains to Paris. From Paris to Venezia, the quickest is the night train which leaves at around eight in the evening and has a restaurant car and a choice of sleeping accommodation. You can have a day sightseeing in Paris, then a day sightseeing in Venezia, which no airline can offer.

Hi hope,

check the rates and schedules on www.volareweb.com. You might find it more convenient and cheaper than a train.
