Hello,

Check
http://www.raileurope.com/us/rail/index.

We decided to just rent a car. I have always heard traveling by train was much cheaper.
Good Luck,
Robbyn

There are trains leaving Amsterdam main station almost hourly for Hamburg. They take anything from 5 to 7 hours, and there are one or two changes of train, depending on the class of train.

The reference library of a city near you may have the Thomas Cook European Timetable. Table 22 has your trains.

Amsterdam 0743, Osnabruck 1107 to 1120, Hamburg Hauptbahnhof 1309
Amsterdam 1013, Osnabruck 1307 to 1320, Hamburg Hauptbahnhof 1509
Amsterdam 1334, Deventer 1406 to 1424, Osnabruck 1707 to 1720, Hamburg Hauptbahnhof 1909
Amsterdam 1713, Hannover 2203 to 2243, Hamburg Hauptbahnhof 2400.

Mostly these trains have buffet cars out of Amsterdam and restaurant cars into Hamburg. The second class single fare with InterCity supplement is 84 US dollars.

Please write if I can help further. Welcome to Europe.
