Wonderful advice from everyone. I now have hotels in Venice (Albergo Cavalletto E doge Orseolo, 11/1 - 11/4), Florence (Hotel Casci, 11/4 - 11/6) and Rome (Hotel Suisse, 11/6 - 11/10) They are all at great rate. Thanks to everyone's advice, I am less anxious now. I'll post again about my trip. My mom is so excited.

I'm not new to the site. I post all the time and just wanted to tell everybody that this thread was amazing. I might have had something to contribute, but I didn't check the site for a couple of days, and by the time I saw this thread, MingWang had completed all her plans.

Hi MingWang - this is great that you're taking your mother to Italy. Have a wonderful trip.
My advice is don't skimp on taking taxis as they are not very expensive and will save time and energy. Your hotels will call a taxi for you and any time your mother is tired you can ask at any hotel you see to get you a taxi. In Rome it's easy to hail them on the street.
Arrive at the train stations in plenty of time to find your track. There should be a train configuration board at the beginning of the track to show where your train car is located. If you haven't bought train tickets yet be sure to get Eurostar tickets with reserved seating. If you don't take the Eurostar then ask for reserved seats when you buy the ticket. You need to validate your train ticket (if not Eurostar) (I think in Italy it's an orange box) at the beginning of the train platform.
