I think that London and Paris with some day trips is quite a reasonable itinerary.
You could however do three destinations if you wanted. London/Paris/Rome would give you four full days in each city which is not bad. Slightly rushed without day trips but not bad. London/Paris/Venice also reasonable in a 5/4/3 day (not counting travel days) configuration.

I have to add my concurrence to the London/Paris idea for your first time in Europe. (I've been to Paris three times and don't really have much desire to go back, but that's just me, and I'm glad I've been). Those two will more than fill up your time, pretty simple to travel between, and have great public transport.
I'm leaving in 2 hours for a week with hubby in Rome (his first and my second trip) and am so excited. But, I would not suggest it for your first time to travel overseas--it's just harder to navigate.
Of course, you could just stay in London 2 weeks and take tons of day trips by trains and not have to unpack and move--but...adding Paris will work great.
(I'm taking 15 folks, students and adults, to London this June for 10 days and we will take 3 day trips--Oxford, Bath, and Salisbury/Stonehenge. I considered Dover, Winchester, Canterbury, Cambridge, and a few others as possible day trips, too--so there's lots to choose from. Windsor, Greenwhich, and Hampton Court make good half-day trips. But you could also fill up your days in London without leaving the city!)

going by train? Then investigate the London Plus railpass which lets you hop any train anytime to all those places plus gives a return train trip by airport express train from London airports. I assume you are renting a mini-bus or whatever but if not this allows folks to take say different trains back if they want, etc.
