I loved taking the old boats across the lake to France, Evian-les-Bains - renown for its mineral water - is about an hour ride or so and a swank lakeside town - Swiss Passes valid the whole way even into France.
Lausanne is only a few miles from Montreux - kind of neat for a large city - especially the upper town and if into Olympics check out the Olympic Museum in this the home to the IOC.

Should be a great trip!
Do try to make it to the Isole di Brissago -- the gardens are lovely.
Much as I loved the parts of Graubunden I saw, I don't think you have time to do it justice to that area on this trip. I think that the Ticino will provide a real contrast to the other places you plan to see. And I think your allocation of time makes sense. BUT I am NOT an expert, and trust that those who are will chime in.
