In years past there were many who got great last minute deals but in recent times, the cruise lines have reversed this practice and now reward those who book earliest with the best prices.
It doesn't hurt to check though...maybe you'll get lucky.

We too can take last minuit cruises and love doing so. Check out the cruise line web sites and BIG cruise agency sites. Last April My husband found 8 days on the Legend for $379 @! Talked to our agent as it was her company's site, cruise.com. She was mad because she could only get same cruise for $399 @. So we did as told and booked on line. Called her once on Thurs. nite about cruise, she called me at 10 next morning to find out if we really wanted to go, We said yes and she said bookings - for Monday's cruise- closed at noon that day! We have had good luck with last minutes-sign up on the lines websites and call the big cruise only people and get on their lists. Usually, about 3 wks. out will get you a good deal and satisfy security.
Downside, you won't get exactly the category or cabin you want (if sold out)
and the early dining will be sold out. We ate in the alternative areas last time and liked it better than the main dining.
