We have been to Jamaica a number of times and the best beaches and spot for water sports is Negril - the water there is very calm and clear and the beaches are long stretches of white soft sand.
Thee are many great all-inclsuives resorts there including Sandals, Swept Away, Grand Lido and Couples. The newer Riu has also gotten favorable reviews. For smaller resort, try www.negril.com

Negril itself is split, there's a 7 mile beach which is all public - anyone can use the beach though it is nice to stay on a hotel that is on it.
There's also the cliffs (aka the west end, the rock) which are right on the water but instead of sand you have steps carved into rock and ladders into the water.
The beach has more tourists, the cliffs are a little more laid back. Both offer water access and watersports though the parasailing and whatnot will be on the beach. Cliff jumping/diving are fun too, and if you stay on the cliffs you can snorkel right there (beach reef is further out, you need to take a boat out), also the cliffs are generally more private, romantic, etc.
If you'd like advice on specific hotels just yell.
Nightlife at the all-inclusives is pretty lame in my opinion, Negril is a great town to NOT stay AI in, lots of live reggae on the beach (free), tons of bars and restaurants, and the big AIs are pretty far from the action.

lan your visit to Negril carefully -- make sure your dates do NOT coincide with Spring Breaks unless you're big on 24/7 frathouse time. Rockhouse is sweet, ditto The Caves for a couple; Swept Away is a good ,if pricier and considerably more organized hotel/resort. Pick your property carefully, Some of the 'funkier',more stylee properties ,without the all=inclusive and marble for days jazz are your goal. You can always stay on the cliffs/West End and then spend the day at the beach. For island touring off-the-beaten track, we recommend Barrett Adventures. Negril is the place to go. We spent two weeks there last year and we are going back for two more weeks in early Feb to avoid spring breaks which start the last week of Feb and go until around 4/10. It is a zoo as we found out last year.
We also put together a five page "first timers brouchure" of things we would have liked to have known--but did not.

you must visit Dunn's river Falls....
We were in Jam. last year and stayed at Sandals Montego Bay... we had a great time but were not all that impressed with the grounds. Wodnerful beach there though!
friends of ours stayed at Dunns River Sandals and loved it. My sister stayed at Sandals Negril and loved it also.
